Black Bean Tacos

Ingredients
- 2 cans black beans — drained and rinsed, 400g each
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp smoked paprika
- 0.5 tsp chili powder
- 8 small corn or flour tortillas
- 2 avocados — sliced
- 1 mango or tomato salsa
- 100 g sour cream
- 2 limes — one juiced for crema, one in wedges
- 1 small red cabbage — finely shredded
- fresh cilantro — to garnish
Instructions

Mix sour cream with lime juice and a pinch of salt. Set aside as lime crema.

Heat olive oil in a pan over medium heat. Add beans, cumin, paprika, and chili powder. Cook for 5–7 minutes, gently mashing some of the beans for texture. Season with salt.

Warm tortillas directly over a gas flame for 20 seconds per side, or in a dry pan.

Assemble tacos: spoon beans onto each tortilla, then top with cabbage, avocado, salsa, lime crema, and cilantro.

Serve immediately with lime wedges on the side.
